Simply Southern Pound Cake and Divine Chicken


SIMPLY SOUTHERN POUND CAKE
(a Mississippi Delta recipe)

2 sticks butter
3 cups sugar
6 eggs
1 tsp. vanilla
1 tsp. lemon juice (optional)

1 cup whipping cream (unwhipped)
3 cups flour

Cream butter and sugar. Add eggs one at a time. Add vanilla & lemon juice.  Add whipping cream and flour, ending with flour. Put into a greased and floured bundt pan (not an angel food removable tube pan). Place in a cold oven. Set oven at 325 degrees and bake 1 hour and 15 minutes.  Optional: Serve with 
sliced strawberries and whipped topping.

DIVINE CHICKEN WITH WHITE WINE SAUCE

(Serves 12)

4 packages of chicken tenders (about 7 to 8 tenders in each package)
1 teaspoon salt
3 tablespoons flour
2 cups sour cream
2 cups whipping cream
1 cup white wine or sherry
1 cup sliced almonds
1 tablespoon paprika


Preheat oven to 325 degrees. Sprinkle chicken with 1 teaspoon salt. Mix flour and 1/4 cup sour cream, then mix with rest sour cream, whipping cream & wine. Pour over chicken. Sprinkle with almonds & paprika. Bake for 1 to 11/2 hours. Serve over rice or Rice-A-Roni Wild & Long Grain.

I mentioned these delicious foods in a post on one of my other blogs on Sunday: Weekend Gratitude: Welcoming Touches. My friend Judy made them for Dinner with Friends, which she and her husband Bart hosted in their home for eight of us from Lake Baldwin Church.  I wish I'd gotten a picture of the chicken, too, since it was as pretty as it was yummy.  I definitely went back for seconds!

Judy sent the recipes along with this verse, a comforting word from Jesus: "I have told you these things, so that in me you may have peace. In this world you will have trouble. But take heart! I have overcome the world." John 16:33

  1. Thanks for sharing these recipes. I'm especially glad to have the pound cake recipe...such simple ingredients...it would have to be good.
